Pepperoni from Pigstale Charcuterie.
Our Pepperone does not need to be eaten on a pizza to be enjoyed. It is all hand-cut pork and unlike American pepperoni , it is not heat treated. It is allowed to naturally age, creating a much richer, deeper and more satisfying flavor profile.

Slowly fermented, this salami is slightly more acidic than our other meats, but the flavor comes together with our measured use of fresh ground spices.
